Serves: 4-6

Ingredients:

  • 600 g chicken breast
  • Water
  • 2 cloves garlic
  • 1 white onion
  • 2 tomatoes
  • 1 dl tomato pure
  • 2 bay leaves
  • 2-4 chipotle chiles in adobo, adjust to desired heat level
  • Salt and pepper, to taste

To serve:

  • Vera Mexicana Tostadas
  • Optional: avocado slices, lime, sour cream, crumbled cheese and your favorite salsa.

Description

Tinga is a typical Mexican dish, made with shredded meat. The most popular way to prepare it is by using shredded chicken but it can also be made with beef or pork or even mushrooms for a vegetarian version. The shredded meat is cooked in a tomato, onion, and chipotle pepper salsa and is typically served on tostadas, tacos, or quesadillas. Tinga is usually accompanied by avocado, queso fresco, chopped lettuce, sour cream and/or radish.

Tinga originated in the State of Puebla in Mexico but has since been adopted and adapted by other States that have given their own twist to the recipe.

This dish is widely popular since it has simple ingredients and is also great for cooking on a budget.


Steps

  1. Cook the chicken breast in a pot with enough water, add the garlic, 1/4 of the white onion, bay leaves, and a dash of salt. Remove from heat when soft. Shred it and reserve the broth.
  2. Finely slice the rest of the onion and bring to a pan with hot oil.
  3. Meanwhile, blend the tomatoes, chilies, tomato pure, a cup of the chicken broth, and salt and pepper.
  4. When the onions are golden, add the sauce to the pan and mix everything for a couple of minutes.
  5. Mix in your shredded chicken and keep stirring for 5-8 minutes, gradually adding more chicken broth to keep the chicken moist.
  6. Serve your Tinga over tostadas and decorate with your favorite toppings.

Author's Notes

Tinga can be served hot or cold. However, we prefer to have it cold when we make tostadas and heat it up for serving it in tacos or quesadillas!
