1. Preheat oven to 180°C and gather your ingredients for the seasoning. If you can season your chicken in advance, then the final result will turn out even more delicious!
2. In a bowl, mix all of the ingredients for the seasoning and mix with a fork or whisk. Place the chicken in an ovenproof dish, and pour the mixture over the meat until covered. Add a bit of water to the dish - do not pour the water on top of the chicken.
3. Place the chicken in the oven and bake for approx. 30 minutes. After the first 15 minutes, flip the drumsticks over so that the chicken can bake evenly on both sides.
4. While the chicken is baking, roughly chop the onions and bell peppers. Next, prepare your pineapple sauce by mixing the cornstarch, soy sauce, and pineapple juice. Mix until the cornstarch has dissolved, and microwave the sauce for 1 minute. Whisk the sauce, and determine if it has the consistency that you want. If it is too runny, add in a bit more cornstarch - if it is to thick, add in a bit of water with some extra salt. Whisk the sauce until smooth, and pour it on top of the chicken.
5. Lastly, coat the drumsticks with our Pineapple Salsa, and place the chicken in the oven for the remaining 10-15 minutes.
6. Final step – Garnish the chicken with your favorite herbs. Serve with rice and a salad or vegetables and enjoy!
