Roasted Chili Macha is a Mexican specialty sauce that originates in Veracruz on Mexico’s Gulf coast, the land of Son Jarocho and danzón – musical artforms that elegantly fuse rhythms from Africa and southern Spain in a classical Mexican style. This beautiful oil-based condiment, too, is a fusion, based on a combination of olive oil and sesame seeds, first brought from the Old World by the Spanish, with toasted dried chilies, garlic and spices from Mexico. The result is a rich chile oil, infused with a distinctive warm, spicy, nutty aroma that adds flavor and depth to tacos, grilled meats, eggs, roasted vegetables and potatoes.
