Fajitas are one of the most popular dishes of Tex-Mex cuisine. Fajita refers to any grilled meat that is cut into strips, the most traditional type of beef and chicken but they can also be modified into vegetarian versions with tempeh strips or by using only vegetables.

The strips are seasoned with various spices (this is where you will find many different twists to the recipes) and grilled with onions and peppers. Finally, they are served with tortillas and accompanied by limes, salsa, or sour cream and cheese, depending on the restaurant.

We like this fusion dish since it easy to make and uses simple and healthy ingredients. We also love how the chipotle adds a level of heat to the meat and makes for the perfect dinner tacos. But want to hear the best part? It only takes around 30 minutes to make the whole recipe!

Steps

  1. Cut your chicken breasts into strips and place them in a bowl. Add the olive oil, chipotle powder, cumin, salt, and pepper, and mix until they are well combined. Let marinate while you prep your vegetables.
  2. Slice your onions and bell peppers and mince your garlic cloves.
  3. Heat up a pan with oil and add the onions and garlic.
  4. When the onions start the brown, add your chicken and let simmer for around 5 minutes or until it is nearly cooked.
  5. Add your sliced bell peppers and let them sizzle with the chicken for a couple of minutes and until your chicken is fully cooked.
  6. Serve with warm tortillas and sprinkle with tomatillo salsa and a slice of lime.
