Chipotle Peanut Pizza with Chicken

Serves: 2

Ingredients:

  • Store-bought pizza dough (or make your own)
  • 1-2 chicken breasts or boneless, skinless chicken thighs (see author notes)
  • 1 red onion
  • 1 bundle fresh cilantro
  • Shredded cheese (any kind)
  • 4 Bacon slices (optional)
  • 120 ml BBQ Sauce (any store bought will do – we used one with chipotle flavor)
  • 2 tbsp Vera Mexicana Chipotle Peanut Macha
  • 2 tbsp Vera Mexicana Oaxacan Chipotle Sauce
  • 2 tsp Garlic powder
  • 1 tsp Cumin
  • Salt and Pepper

Description

Mexico has long had a love affair with Italian pizza. A large number og Italian immigrants inhabited Mexico City back in the 19th century which is why you can find plenty of Neapolitan-style pizzas in the city today. For this reason, there have been numerous fusions of the two food cultures – among others this pizza. You may be thinking... what? Peanuts on pizza? However, this salsa macha is a beautiful mixture of olive oil, peanuts, dried chilies, and garlic and it goes perfectly with roasted chicken on pizza.

Method

  1. Preheat the oven based on the instructions on the dough (around 200-220 C).
  2. Cut the chicken into bite-size pieces and heat the oil in a pan. 
  3. Sauté the chicken with spices until the chicken starts to brown (don’t worry about cooking the chicken completely since it’ll bake in the oven as well).
  4. Toss the chicken in a bowl with the Chipotle Peanut Macha – you can add more depending on how spicy you like it.
  5. Fry the bacon slices and crumble.
  6. Mix the BBQ sauce with Oaxacan Chipotle Sauce and smother the pizza dough with the sauce as you would with regular pizza sauce.
  7. Top with chicken, shredded cheese, sliced red onions, and bacon crumble.
  8. Bake according to instructions or around 20 min until the crust and bottom are crispy.
  9. Top with lots of fresh cilantro. Buen Provecho!

Author notes

You could also use leftover chicken such as pulled or baked chicken for this recipe.
