Gerardo is a farmer with more than 25 years experience. He has cultivated everything from corn and beans to general open air vegetables. For the past 18 years Gerardo has focused on chiles and tomatoes – and he has perfected his craft.
When Gerardo speaks about farming it is obvious that he loves what he does for a living. In his own words, he “is a man drawn to the earth, the magic of its soil, and the flavors it gifts us”.
Together with Gerardo we are cultivating several different chilies: chilacas (pasilla), jalapeño (chipotle and morita), guajillo, arbol, ancho, and habanero.
